Chicken and Broccoli Alfredo

This is an easy recipe that can be doubled for more people.  I like to use leftover chicken or turkey for this dish.

Chicken and Broccoli Alfredo – yield 4

1/2 package linguine or fettuccine
1 c broccoli florets
1 lb chicken breasts, cubed
1 can cream of mushroom soup
1/2 c milk
1/2 c grated parmesan
1/4 t pepper
1 T olive oil

Cook noodles according to directions, adding broccoli in during last for minutes.  Drain.  Meanwhile, add olive oil to skillet and cook chicken until browned.  Blend in soup, milk, cheese, and pepper until smooth. Toss in pasta.  Heat an additional 5-10 minutes.
