Oven BBQ Ribs

You’ll need to start this the day before, so plan accordingly.  We never have leftovers in this meal!  You can use either pork or beef.

BBQ Ribs

3 lbs ribs – beef or pork
1 onion, diced
2 cloves garlic, minced
2 T olive oil
12 oz sweet chili sauce
1/2 c lemon juice
1/4 c molases
3 T dijon mustard
1 T worchestershire sauce
1/4 c dark rum

Simmer ribs in a large pot of water for 40 minutes.  Drain and set aside in a pan with sides.  Meanwhile – In a saucepan, saute onion and garlic until translucent.  Add in remaining ingredients and simmer for 25 minutes.  Pour over ribs.  Cover and marinate overnight.  Preheat oven to 350 degrees.  Bake for 1 1/4 hours, basting every 20-30 minutes or so.
