Lemon-Lime Chicken

I made this dish quite often in our early 20s as it was healthy, fast, tasty, and the marinade was very inexpensive.  We also liked to roll it in the crushed seasoned oyster cracker recipe before baking

Lemon-Lime Marinated Chicken – yield 2

2 boneless, skinless chicken breasts
2 T lemon juice
2 T lime juice
dash of red wine vinegar
1 c water
dash lemon pepper seasoning

Mix juices, red wine vinegar, water, and seasonings in zippered baggie.  Add chicken.  Marinate 2+ hours.  Remove chicken place on greased baking dish – may also roll in crushed seasoned oyster crackers or top with feta cheese.  Bake at 350 degrees for 20 degrees until no longer pink.  This is also good with fajitas and tacos.
