Tim’s BBQ Ribs

In typical barbeque fashion, this has no set times!  And no set measurements.  But this makes an excellent meal of ribs.  You’ll need to start this the night before and plan the meal on a day when the actual meal time can be flexible as it can vary greatly depending on the thickness of the ribs as well as oven/grilling times.  We use/prefer a charcoal grill.

Tim’s BBQ Ribs

1-2 Racks of Pork or Beef Ribs (we prefer pork, don’t get the thick country style)
BBQ Rub of choice (store bought or make your own)
BBQ Sauce (we like Sweet Baby Ray’s)

Fully thaw ribs.  Rub on bbq spice rub on meat side of ribs until fully covered.  Take a fork and poke it like crazy (nicer version that what my husband said).  Place in a 9×13″ pan or something with sides.  Cover with foil and refrigerate overnight.  Place in oven on 250 degrees until bones are sticking out approximately 1/2″ (3-6 hours depending on thickness).  Prep grill.  Take out (careful not to spill as there will now be juices) and take out to grill.  Glaze with BBQ Sauce and place meat side down for 10-15 minutes until the ends start to get a little crispy – watch so it doesn’t burn.  Flip to bone side down and glaze with honey for 5 minutes.  Flip back over for 5-10 minutes until done.
